I just discovered Arastta and after the agony of managing Zen cart for years at first glance it looks brilliant.
Installation went like a dream though when changing the name of the admin folder it took a little time to work out that I also needed to change the admin folder name where it appears in the define.php files.
My problem arises with changing the products and categories. I deleted all of the test products and categories and created a couple of new ones. However, the store category tabs still show the old parent categories and the new ones do not appear. Also when I add a product, I cannot see how to link it to a category, even though a category field (empty) appears against the product. Can anyone give me a kick-start on this?

Welcome on board John.
The top bar is a menu managed from Appearance => Menus page: http://arastta.org/blog/getting-started-menu-manager
However, logically the menu item must be deleted automatically when category,product etc gets deleted. So I opened an issue on the bug tracker: https://github.com/arastta/arastta/issues/9
As for to display new ones, you must check the Top option in the Data tab: http://arastta.org/docs/user-manual/catalog/categories/data
You can link a product to a category from the Links tab http://arastta.org/docs/user-manual/catalog/products/links
