I found it, and fixed it. An update should be available soon.
Someone had forgotten the closing tag in text_home in default.php, which is displaying the home icon in the breadcrumb navigation. But also, sadly someone had discovered and fixed it two months ago, but none has seen and approved it before now.
PS! The add to cart text is a bit long when it's displayed on products in categories (list with grid view), consider if it can be shortened in any way - "Aggiungi al carrello". -

Great that you decided to help out, but yes, sadly you have to wait for the proofreader/manager. But you can try contacting Gilbert directly to speed up things, seems like he has better knowledge to Italian than me, he might even make you a proofreader if your language skills are good enough.
At Crowdin: https://crowdin.com/profile/gilbertlici
Here: https://arastta.org/gilbertlici
EDIT: Just noticed someone has made you a proofreader already, and that you have validated the strings. So I triggered a update of the language pack by changing version number in install.json and then run the project build. A update should be available in store admin soon. -

A screenshot, or at least a more detailed description, would be helpful... But it's probably just some bug in the language files, so please activate advanced error reporting in settings and see what you'll find on screen or in log file: https://arastta.org/docs/user-manual/system/settings/server -

Much of the same problems as in French, they both still have lots of crap from the imported OpenCart language files.
Look at https://arastta.org/forum/probleme-with-cart
Then you can consider helping out fixing the Italian language pack here: https://crowdin.com/project/arastta/it# -

If you want to prepare a new release, to trigger a update in Arastta, you need to change the version number in install.json - and then wait for the next Build (or PM a manager if important and in hurry). If it's just minor changes you might consider to just download and upload the file manually to your store, until more work is done before triggering a new release.
PS! If you haven't already done it, please join the Translation Team group, and feel free to read some of the old useful info (discussions): https://arastta.org/community/group/5-translation-team -
