Can I charge a deposit only ? and tax question

I am wanting to charge a deposit for most items, so if an Item is listed as 100 then I want the checkout to clearly state deposit of say 10% required now please pay 10.00 etc... Also I wanted to have the option to set the amount to include tax... ...
