I know Arastta has English as one of the default languages, but the problem is that it's technically U.K. English or en-GB and there are slight differences in the words between British English and American English en-US.

So what should I do about localizing the English in Arastta to use American English (en-US)?
Do I have to go and write a translation file myself to fix this or is there another method?

You can translate Arastta easily at Crowdin: https://crowdin.com/project/arastta
Btw! I just added English US as a target language to the project, so you can start working on it.

Alright, you might also want to add English GB in there as well. I'm noticing a few spelling errors in the en-GB translation.

That's not an option as en-GB is the core language, if there is mistakes in it you has to report and/or send fixes to the core at GitHub: https://github.com/arastta/arastta

The current en-GB is not really pure English GB as it was created by a British living in China (OC owner) and we're also not British. So your suggestions are very welcome. As Rune said, changes for en-GB must be done through GitHub as it's the core language.

I'm American, not British either, but I have learned enough English in school to learn and spot the difference and variations between the two and the differences in the uses of phrases.
