In my site I am renaming the product tab 'Specification'. This value is in ...\store\catalog\language\en-GB\product\product.php.
The problem is that every update re-writes this file and the change is lost. I can edit the product.tpl file to set the value for $tab_attribute there.
Is there a better approach?

You can use Language Override feature. This is the easiest and update-proof way to change language texts:
