Is there a way to add a field to capture where a customer heard about a store? A drop-down list of sources or an empty field would be ok.

Simon, you can use the Custom Fields feature built in Arastta for that purpose: https://arastta.org/docs/user-manual/customers/fields
You should select Account as Location.
