Is it possible to create a custom field in products/edit products/special called Price Text? So I can add RED text to explain a special price that will not show when the special ends.

I think this is an important feature missing in Arastta and there are no extensions to make it work. I don't know coding so I have no idea if this is an easy thing to do or not.

We're going quite of topic now, but ...
Quite many of those developing and giving support for OC should be able to also work with Arastta easily, but they probably don't want it to be public known as OC admin most likely would find a way to punish them then (e.g. blacklist/block), and it's also one reason some don't do public available Arastta versions of their extensions. But since you have used OC before, you probably know some good developers through their extensions already, so you could contact one of those directly.
Arastta is still considered being young, and maybe not picked up by so many developers yet. Though you'll find some active one in this forum, the Marketplace, and even through GitHub. You could maybe also consider asking the core devs (Denis & Co) to do some supported (paid) development, I'm not sure if they take such projects though.
But this site/forum should probably also have a "Commercial Help Wanted" section. A place developers can get access to see posted jobs / help requests for a small fee (no public access except for posting) ...

It's a community forum, and it's summer. People being out enjoying the sun etc., so don't expect too much at this time of year, or any time of the year ... Most are read, and replied to, but not always within a few days. Seems like you have one, ap. 1 day old unresponded post, is there any older?
That being said, sure it's possible to do quite much, this included. But it's a special requirement, requiring some coding. So in my opinion you have two choices, adding it to the ideas section ( https://arastta.org/ideas ) and see if enough people needs it to get it included as standard, or hire someone to code it for you as a modification. -

I think on the backend the field would be shown in two locations:
The first is on the Product Edit/data Text field. This would be a permanent text field located below the item name on the front end.
The second would be on the Product Edit/Special field. This would be a temporary text field located above or below the sales price on the front end. It would have an expiration date with the product special end date.
If this was build as a module or extension I understand that as well. I don't think every cart needs it but most carts run specials and it's nice to promote specials with additional text such as "Mail in Rebate", "Instant Rebate", "Good through MM/DD/YY", "Countdown timer" -

@Rune - How does one go about hiring someone to make a modification? I did explore this option however I could not find any website that listed people that would build modifications for Arastta. I think it's important that these individuals can be found on google so they can get the jobs.
I'm really a fan of Arastta and I voted for them in the commerce category for the upcoming awards. I hope they can get developers on board so that extensions can be written. -
