I am running several test transactions and I am getting the email notifications.
But the store banner that appears in the emails is huge.
So I took the default Arastta banner and checked the size of it in Photoshop and found it was 240x40 pixels.
So I adjusted our banner to the same width constraining the proportions which gave me the size of 240x79.
I uploaded the new sized banner, and I cleared the cache to make sure to cover that base.
But the emails still have huge banners.
I'll attach a screenshot.

How do I correct this?

you could load a different size logo just for the email and the main one for the site

How would I do that? I have reduced the site banner to a very small size. The email banner still comes up oversized.
Seems like an issue with the email template generating a banner that's too large.

It would be better if it's a true bug, it is fixed officially in the files to be shared with everyone in an upcoming update.
I don't want to get into hacking up the code with my limited knowledge.
